Mom and I decided we’d try some of those fabulous Pinterest ideas and see if they really worked!
She made Pumpkin Muffins from this pin: All you need is a can of pumpkin and spice cake mix! Or so it says… I decided to “hard boil” eggs in the oven… yeah I had the same look on my face too y’all.
BREAKFAST! Pumpkin Muffins – only 2 ingredients. That’s right, just the cake mix and the pumpkin. No oil, no eggs, no water, nothing else. Bake at 350, this is a Weight Watchers treat, very low cal.

So… did it work?

It did! And they were amazing! Very moist and yummy. Mom and I are on a diet, so it was a tad difficult to avoid eating them all at once! But I was a good girl and only ate a couple over a couple days. Definitely recommend!
Hard-boiled eggs in the oven
I’d say a 90% success rating!
It says that the eggs were supposed to be easier to peel, but I found they were of the same difficulty. Perhaps I just didn’t let them cool enough. But it worked! And I didn’t have to worry about waiting for the water to boil or wasting counter space while cooking other foods. Just popped them in the oven and a dozen “hard-boiled” popped out! (Not literally) A few I left in the shells to bring to work with me and eat while here… again, I’d say SUCCESS! 🙂
Some had some little brown spots, but they washed off.

See, they did NOT peel well, lots of damaged eggies. Some had the brown marks underneath the shell, but it didn’t affect the taste at all. I’d say, if you really didn’t like that, just pick them off.

Pumpkin muffins are fantastic – you can also do most any other cake mix flavor, like devil’s food, since the pumpkin flavor is so mild.
The egg baking idea is awesome. I love roasting things, because it’s so easy – you just stick it in the oven and set the timer. So I will totally have to try roasting eggs. 🙂
It was super easy and worked really well! I was really skeptical at first but I definitely recommend if you have something else to do for a half an hour! 🙂
